Resumen

Fresh chicken meat is one of the most consumed food due to its high nutritional value and low fat content, as well as being a source of proteins, vitamins and minerals. However, the consumption of fresh chicken is one of the main causes of food infections due to possible contamination with Campylobacter bacteria. To guarantee the microbiological safety of fresh packaged chicken and in order to increase its shelf life, the Technological Institute of Packaging, Transport and Logistics (ITENE) has developed a new system of active double-bottom self-generating modified atmosphere packaging rich in CO2. The new antimicrobial material generates its own protective atmosphere once it is closed which is a great innovation for both end users and food industry
