Résumé
The paper analyses the evolution of nutrition in the Spain of the twentieth century and offers, from history matters and the uses of the past, clues to help understand their challenges today. The positive dynamics of the first three decades were interrupted by the civil war and the lack of continuity of science, health, food and nutrition policies that supported that progress. Although in the years 1950 and 1960 some initiatives were retaken from the field of food science and community nutrition programs, it was in the 1980s and 1990s when the standardization of the process began, after the recognition of human nutrition and dietetics as a university degree, and the consolidation of scientific and professional associations and research activities and dissemination of results.
