La gastronomía como recurso turístico en la provincia de Alicante

Resumen

During the last decade gastronomy in Spain has became a success. Since then, various public policies have made an effort to invigorate them in their tourist promotion plans. Therefore, the objective of this work, which is confined to the province of Alicante, is to know its gastronomy and its value as a tourist resource. Firstly, there has been a bibliographic review of the most relevant studies on the gastronomy of Alicante. Next a brief history is done about the gastronomy as a lure to attract visitors and tourists. Finally, the different products and elaborations are studied by relating them with their geographic areas, resulting in significant differences between the inland areas and the coast, among which excel the protected designations of origin (PDO) and the protected geographical indications (IGP) recognized at present in the province of Alicante. An exhaustive knowledge of gastronomy is a necessary precondition for raising rigorously gastronomic tourist products that act as complementary agents and facilitators of tourism. In conclusion, we highlight the actions for stimulating this sector that organizations such as the Costa Blanca Tourism Board carry out and that are essential for the suitable development of this sector.
