Resumen

Organic farming represents a clear alternative to maintain an economic fabric in rural areas, provide social agriculture viability and curb the trend of industrial production without farmers, at the same time maintaining a living countryside. Also it plays an important role both in the protection of especially vulnerable areas (nitrate sensitive areas, protected areas...) as in the conservation of traditional agricultural landscapes with high environmental value, it favors the crop varieties and livestock breeds disappearing and protects against forest fires. Our objective in this paper is to analyze to what extent organic farming has meant a real alternative in the province of Cuenca for the maintenance of the family farms, analyzing its dia chronic evolution, the chosen productive specializations and patterns of territorial progress as well as its connection with the ecological agro-industry in the territory.
